Fish Finger Frittata with Smiles & Peas

A tasty meal that can be served any time of day – a healthy breakfast, nutritious lunch or light dinner. A real all-rounder!

Ingredients:

  • 10 Sea Harvest Fish Fingers
  • 1 x 415 g packet of McCain Smiles
  • 10 large eggs, whisked
  • 150 g cheddar cheese, grated
  • ¼ C (60 ml) McCain Garden Peas, thawed
  • non-stick cooking spray

Directions:

Preheat the oven to 200 ºC.

Arrange frozen Sea Harvest Fish Fingers and McCain Smiles on a baking tray. Place into the oven for 15-18 minutes and cook until golden and crunchy. Alternatively cook in an air fryer for the recommended time.

Spray a 24 cm oven-safe frying pan well with nonstick cooking spray.

Set the pan over medium-low heat stovetop. Add the whisked egg mixture to the pan and leave to cook slowly until it just starts to set at the edges. Do not move the mixture.

Sprinkle the cheese evenly into the slightly set egg mix and carefully place the fish fingers on top (setting the eggs and then adding the cheese will help prevent the fish fingers from sinking). Scatter the peas around, then carefully put the pan into the oven with the grill on.

Grill until the top has browned and the centre is set, then serve with McCain Smiles.
