Preheat the oven to 200 ºC.
Lay frozen Sea Harvest Crisp & Chunky and McCain Smiles onto a baking tray. Place into the oven for 20 minutes and cook until golden and crunchy. Alternatively cook in an air fryer for the recommended time.
Once the fillets are cooked and slightly cooled, cut into strips.
Mix the mayonnaise and tomato sauce together; spread a layer onto 4 of the buttered slices of bread (set the rest of the sauce aside for serving).
Put a layer of grated cheese on top of the sauce and then top with strips of Crisp & Chunky fillet. Top with a little more cheese and season with salt. Top with the other buttered bread slice.
Heat a frying pan over medium-low heat. Place a sandwich (or 2 if you can fit) into the pan and cook low and slow until golden on one side, then flip and repeat. Tip: if you cook at too high a temperature you may brown the toast without melting the cheese, so it’s important to cook slowly.
